A PhD chemical engineer left the oil industry to roast coffee and named her roastery after the word for "knowledge" in her family's Ghanaian language.

Mirian Diop holds a PhD in Chemical Engineering from Northwestern and spent years in the oil industry before founding Katï. The name comes from Lelemi, the language of her Ghanaian parents, where "katï" means knowledge — and that precision shows in every roast.

Her Uganda Rwenzori is a standout: complex, clean, and roasted by someone who understands chemistry at a molecular level.

NūStory Coffee Co.

Founder spent nearly a decade living in Central America and built direct relationships with Guatemalan farmers — the roastery's name marks his family's new chapter.

Graham Goshinmon didn't just source from Guatemala; he lived there for close to 10 years, building real relationships with the farmers whose coffee he now roasts. "NūStory" is personal — it marks his family's move from Central America to Missouri.

Floyd, VA · Population 438

Forbes named them one of the 12 best coffee roasters in America. They operate out of a town of 438 people in the Blue Ridge Mountains.

Red Rooster is a three-time Good Food Award winner with over 50 coffees scoring 90+ on Coffee Review. They won the 2016 America's Best Espresso competition. They're the only coffee company in the country with on-site daycare for staff. Nearly 50 employees in a tiny Appalachian town.

Ruby Coffee Roasters

Nelsonville, WI · Population 250

Founder Jared Linzmeier left the West Coast specialty scene to move back to rural Wisconsin and start roasting in his family's garage. Now he runs a 4,000 sq ft warehouse in a village of 250 people.

Jared worked at Intelligentsia before returning to his roots in 2013. Now Ruby roasts "Colorful Coffees" — vibrant, expressive single-origins celebrating seasonality and terroir — from a warehouse in a village so small it doesn't have a grocery store. Named Best Coffee in Wisconsin by Food & Wine two years running.

Their weekend-only Nelsonville cafe has become a pilgrimage destination for coffee lovers who make the drive from Madison and Minneapolis. Ruby partners exclusively with small farms and small exporters. A population of 250 and 26K Instagram followers — proof that great coffee needs no zip code.

Wonderstate Coffee

Viroqua, WI · Population 4,500

Roast Magazine's 2025 Macro Roaster of the Year — the first company to win in both micro and macro categories. Their cafe is a converted 1940s Mobil gas station.

Wonderstate roasts on a vintage 1930s Probat G-30 in a solar-powered facility. They pay farmers double the Fair Trade price minimum and run a 5% Giving Program. Certified B Corp. Their bestselling Driftless blend outsells all others five to one.

Paradise is an origin-owned, vertically-integrated coffee company that manages farms in Hawaii and maintains direct relationships with producers worldwide. They roast on a Diedrich IR12 in historic downtown Hilo. Their average Coffee Review score across 150+ reviewed coffees is 94.
